KS-282 Long Grain Rice is a non-basmati long grain white rice bred at the Rice Research Institute at Kala Shah Kaku and released in 1982. The KS in the name is Kala Shah. It was developed in Pakistan, for Pakistani fields, by the institute that has bred most of what the country grows.
It grows across the Punjab rice belt, in the same districts that grow the basmati: Gujranwala, Hafizabad, Gujrat and Mandi Bahauddin. Punjab is where Pakistan’s fine rice comes from, and KS-282 is the coarse variety that shares those fields, that soil and that river water. It is a Punjab grain in a way the IRRI varieties, which belong to Sindh, are not.
That origin shows in the bag. KS-282 mills to a clean white long grain and cooks soft and fluffy with the grains staying separate. It is a generous-looking grain in the bowl, and it stays neutral enough to carry whatever the kitchen puts on it.
