What Is Golden Sella Basmati Rice?

The Same 1121 Grain, Hardened Before Milling

Sella is not a type of rice. 1121 is the type: an extra long basmati grown in Punjab and Sindh. Sella is what the mill does to it.
 
Rice arrives at the mill still inside its husk. Before the husk comes off, the mill soaks it, steams it under pressure and dries it again. That is parboiling, and sella and parboiled mean the same thing. It part-cooks the grain while the husk is still on, and it leaves the grain much harder than it started.
 
The steam also changes the colour. A long steam pulls colour out of the husk and into the grain and turns it amber. That is 1121 golden sella basmati rice. A short steam leaves the grain pale cream, and that is white sella, also sold as creamy sella. Both cook the same way.
 
This is what most Gulf kitchens use when they cook at scale. Mandi, kabsa, machboos, biryani and pulao are made in big pots, held warm and served across several hours. Golden sella was made for exactly that, and it is why it outsells raw basmati everywhere catering volume is involved.

The most popular grade of 1121 golden sella basmati rice in the Gulf. A long steam gives an amber to deep gold grain. It is the hardest of the three and the easiest to cook in large pots. Used for mandi, kabsa and biryani. We agree the exact shade with the mill before production, so you get the colour you approved.

* On aroma. 1121 is an aromatic grain and golden sella keeps that aroma, but parboiling softens it: sella smells less than raw or steam 1121 does, and any supplier selling you parboiled basmati on “intense aroma” is overselling it. If aroma is the deciding factor for your customer, buy 1121 steam and accept that it will not hold as well in a warm tray. Most catering buyers make the opposite trade deliberately.

** On the Kett value. Kett is the meter the mills use to read how dark golden sella has come out, and 20 to 22 is the range most Gulf buyers accept. It is worth naming in your contract, because “golden” on its own means different things to different mills and the shade is the single thing your customer will notice first.

*** On crop year. Aged 1121 costs more and cooks longer and drier, and some buyers specify it. One crop year in the bag matters more than the year itself: a mixed-crop bag cooks unevenly, which is the fault most likely to reach your customer. We ship one crop per batch and the test sheet says which.

How to Cook 1121 Golden Sella Basmati Rice in Large Amounts

A Method to Start From, Then Adjust to Your Own Pots

Golden sella is not cooked like raw white basmati. It is a harder grain, so it wants more water, more time and a soak first. Start with the four steps below and adjust them to your own pots and burners. Most first orders that disappoint are cooked like raw basmati, not because anything is wrong with the rice.

Step 1

Soak

Put the golden sella in clean cold water for 30 to 45 minutes. It is a hard grain, and skipping the soak is the single most common reason rice comes out hard in the middle.

Step 2

Water

Use about two parts water to one part dry golden sella. Raw basmati needs about one and a half. If you boil and drain instead, salt the water well, cook until the grain is about 70 per cent done, then drain.

Step 3

Cook

Bring it to the boil, drop to the lowest heat and cover the pot. Do not stir after that. For layered dishes, seal the lid and finish on dum, in its own steam, for 15 to 20 minutes on very low heat.

Step 4

Rest

Leave the pot covered for 10 minutes. Then lift the rice with a fork instead of stirring it. Kept covered and warm, it stays loose for two to three hours.

Three things decide whether a batch of golden sella is good: the same colour every time, grain that was dried properly, and one crop year in the bag instead of a mix. Colour is the one buyers notice and the one mills vary, because the shade depends on how long the rice was steamed. We agree the Kett range with the mill before production and check it against the sample you approved.

Crop mixing is the fault most likely to reach your customer, because a bag of 1121 golden sella holding two crop years cooks unevenly and no amount of care in the kitchen fixes it. We ship one crop per batch and the test sheet says which. In Qatar the stock is kept under cover at Birkat Al Awamer and moved first in, first out, so the rice you receive has not been sitting for years.

The Certificate Your Country Asks For on Golden Sella

Some countries will not release your golden sella container without a Certificate of Conformity. It is the grade most Gulf biryani kitchens buy. Golden sella holds its shape through the dum and through a reheat the next day, the grains stay separate rather than clumping, and the extra length of 1121 is what shows on the plate. It is also the more forgiving grain when the pot is large and the person watching it is busy.
Because of the rice underneath, not the steaming. 1121 is an extra long basmati grain and it costs more in any form. Most kitchens find the gap narrows once they count what they actually serve, because fewer grains are broken or stuck together. If cost is the deciding factor, 1509 basmati is a shorter and lower priced extra long grain.
8.30mm minimum is the figure Pakistani mills generally certify for 1121, and cooked it stretches to roughly double that. Ask to see the number on the mill’s test sheet rather than in a brochure, and be careful with suppliers publishing longer figures without one.
